Oriental Stir Fry


1 lb lean beef strips

2 garlic cloves (minced)

4 cups of assorted fresh vegetables (Use what you have, I used red, yellow and orange mini bell peppers, broccoli, onion, carrots, mushrooms, celery)

3/4 cup fat free chicken broth

2 Tbsp Cornstarch

2 Tbsp Soy Sauce

Cook beef strips with garlic until meat is fully cooked.

Add vegetables to the meat, 1/4 cup of the broth and the soy sauce. Cover and cook until vegetables are crisp and tender.

In small bowl, mix remaining 1/2 cup broth and the cornstarch, stir into stir fry mixture. Cook about 1 minute, stirring frequently, until sauce is bubbly and thickened. Serve with rice.
