6 oz sliced, cooked roast beef, cut into 1/2 inch
2 cups frozen whole kernel corn, thawed, drained
2 cups chopped zucchini
1 medium red bell pepper, seeded, cut in bite size strips
1/2 cup bottled chunky style salsa
1 oz Queso Fresco, crumbled (optional)
1. In a medium size bowl, combine beef, corn, zucchini and bell pepper. Add salsa; toss gently to combine.
2. Divide mixture evenly among four bowls. If desired, top with Queso Fresco.
Yield: 4 Servings
