This soup is quick to make, flavorful, and filling! Serve with warm corn bread or tortillas. This also freezes well. Garnish with chopped fresh avocado, Monterey Jack cheese, crushed tortilla chips, or green onion!
I can’t say enough good things about this recipe!! Suffice to say that I’ve made it at least 6 times in the past several months. It’s such a good, hearty soup, and so easy to make. I’ve made it for friends several times and EVERYONE has asked for the recipe.
We are big soup lovers and make many kinds of soup all year round. My husband, son and I love this soup. I have made this soup at least 4 times over the last year. I usually double the recipe and saute the chicken breasts in a little olive oil with garlic powder and black pepper then shred before adding to the soup just before the simmering step. I also use additional chicken broth instead of water and add 1 jar of salsa. Sometimes I add hominy, sometimes not. I also add cumin and some lemon juice to taste.
